My  Process:
 
My Candid photography is all done hand held. Most of my candid photography is at outdoor music venues. For these venues, I use my Canon 70-200 mm f/2.8 lens with the 1/4x tele-converter.

The remaining candid photography is indoors at family gatherings and parties where the lighting is usually not very good. I don't use a flash and thus I use my Canon 135 mm f/2 lens as opposed to my 24-70 f/2.8 lens. Often times, I have to use the shoe-leather zoom feature of this lens!
